I have found out that I really love to COOK! New recipes are fun to find. I like the simple ones with a limited number of ingredients. I like Rachel Ray's Show and I get lots of recipes from her. I also get a number of emails from Kraft, Betty Crocker, and Eat Better America. Those sites are really helpful too. They have simple, healthy, and quick recipes.

The latest recipe I tried was from Rachel Ray. I fed it to my dh and he LOVE IT. He said he would pay money for it. We are not big guacamole fans in my house so if you are not either then don't worry. This is really good. Try it. It is Tex-Mex Chicken Club.

Tex-Mex Chicken Club
Ingredients
1/2 tablespoon EVOO
4 slices smoky bacon, chopped
2 pieces boneless, skinless chicken breasts
Salt and pepper
1/2 teaspoon ground cumin
1/2 teaspoon oregano
1/2 teaspoon chili powder
2 small or 1 large ripe avocado
1/2 small red onion, finely chopped
1 clove garlic, grated or pasted
1 small jalapeno pepper, seeded and finely chopped
1 lime
4 slices ripe tomato
4 leaves leaf lettuce
1 tablespoon butter
4 large eggs
4 deli slices Pepper jack cheese, Monterrey Jack or cheddar cheese
8 Slices white or wheat Pullman bread, toasted
Yields: Serves 4

Preparation
Heat a drizzle of EVOO in large skillet over medium high heat. Add the bacon to the skillet and cook until crisp, 3-4 minutes, drain bacon and reserve. Wipe out all but 1 tablespoon of the drippings. Halve the chicken breasts across, producing 4 cutlets. Add cutlets to the skillet and season with salt, pepper and cumin, oregano and chili powder. Cook chicken 3 minutes on each side to golden and firm.

Mash avocado with onions, garlic, jalapeno, the zest and juice of 1 lime. Stir in bacon bits. Taste the guacamole and season with a pinch or 2 of salt if you think it necessary.

Remove chicken from skillet then wipe clean and reduce heat to medium. Add butter and melt. Fry eggs to medium or well, 4-5 minutes, turning after 3 minutes. Melt cheese over each egg under loose foil tent in last minute or so of cook time.

Place fried eggs on toast and top with thin chicken cutlet, lettuce, tomato and bacon guacamole, set toast tops in place and cut corner to corner.

**I actually forgot about the egg when I was cooking and we didn't put the egg on our sandwiches but I will try it next time. I also used low calorie white bread and just toasted it. I healthfied it for me and my dh.

New Blog Design

There are some new easy to use templates out there.

I chose this one.

I like it. Hope you do too.

Have a great day everyone!!!
Here is something cute I found on the web.
I love cute accessories.

No Games. Just Sports.

I just found this picture of me running the 5K. I didn't know they were taking pictures. I think it is funny how painful my face looks. This was about halfway through the 5k.

I am still training to run the whole 5K in September. I am doing the couch to 5K program. It is a good and easy to follow program. Last night I ran/walked 3 miles and still felt good afterwards.

Here is my Momma crossing the finish line. I love that she is still smiling!

Last night when I was running I thought about the "What A Woman Wants" movie with Mel Gibson and how the ad executive pitches a slogan to Nike. Something like "She's running. It's early, it's quiet. Just the sound of her feet on the asphalt." I thought that was a bunch of crap. Because last night when I was running all I heard was my very heavy breathing, the wind in my ears and me feet pounding the pavement. Maybe one day I will feel like that woman but not today.

I found another new recipe I love. I also love being able to use my crock pot when cooking so that is a plus too. Give this one a try. It is easy and delicious.
Slow Cooker Chile-Chicken Tacos

1 1/4pounds boneless, skinless chicken thighs
1 envelope (1-oz) Old El Paso® taco seasoning mix
1 tablespoon packed brown sugar
1 can (4.5 ounces) Old El Paso® chopped green chiles
1 cup Green Giant® Niblets® frozen corn (from 1-pound bag), thawed
1 can (10 ounces) Old El Paso® enchilada sauce
4 medium green onions, sliced (1/4 cup)
1 package (4.6 ounces) Old El Paso® taco shells, warmed if desired
3 cups shredded lettuce
1 medium tomato, chopped (3/4 cup)

1. Spray 3- to 4-quart slow cooker with cooking spray. Place chicken thighs in cooker. Sprinkle with taco seasoning mix and brown sugar; toss to coat. Mix in green chiles, corn and 1/2 cup of the enchilada sauce. Refrigerate remaining enchilada sauce.

2. Cover and cook on Low heat setting 6 to 7 hours.

3. Place chicken on cutting board; use 2 forks to pull chicken into shreds. Return chicken to cooker. Stir in green onions. Cover and cook on Low heat setting 15 minutes.

4. Heat remaining enchilada sauce. Serve chicken mixture in taco shells with lettuce, tomatoes and warm enchilada sauce.

Things I didn't know this time last year

46-0-0 = Urea
18-46-0 = Dap
0-0-60 = Potash
21-0-0-24 = Ammonium sulfate
1 acre = 43,560 square foot
Senath's zip code is 63876
Kennett's zip code is 63857
It takes exactly one hour to get from Kennett to Sikeston.
Oh, how things change so quickly around me.
I am very thankful for where I have been, where I am, and where I am going.

Memorial Day Weekend

We had a great weekend....trip to the zoo & went to a concert. Making Memories.

What a weekend!!!!

Is the weekend over already? Whew! What a busy weekend!
My Mom & I ran in a 5K this weekend. My mom finished in 41 minuets and I finished in 37:22. It was hard but fun all at the same time. I'm glad we did it.
Good Job Mom!

Then David & I did yard work on Sunday. We trimmed back bushes, cleaned out flower beds, and put out mulch. Oh...too much work. I told David he was trying to kill me. Thankfully I survived and here is a pic of me and kids by the trailer we filled up.

The kids played in the slip & slide while yard work was being done. They had a lot of fun. The first time playing in the water at the start of the summer is always fun.

I hope you had a great weekend like I did.

Random Thoughts

How country does it make me now that I have my own fishing licences?

I see the spider web in the corner but why don't I ever see the spider?

What should I plant in our little garden or is it too late to mess with?

PreSchool Days are Over

My little Lou graduated from Preschool last Friday. It was all too cute. Yesterday was the last day of preschool for her and this morning she just cried because she wasn't going to school to see her teachers and friends. It just broke my heart for her. I told her she had the summer to look forward to. She will get to go to Mrs. Belinda's, we are going to the Zoo soon, and she will get to spend time with her grandparents. This only eased the tears a little bit.
This is proof that growing up is hard to do.

Busy Summer

Today I filled out my families summer schedule. Does June look busy to you?

My sister in law would be so proud of me.
All the organization and color coding is right up her alley.

Our First Fishing Trip

The kids and I went fishing at Jerry Paul Combs Lake in Kennett. It was a nice day but a little windy. Here are a few pics from our trip.
Kara & Trey with the only fish we caught.
Trey was so excited but he never did touch it.
Lani got to touch it and even throw it back into the lake.
Lani was all smiles during our fishing trip.
When she got tired of fishing, she started playing with her new pet worm.
May the worm rest in peace.

Kara helping Trey fish.

She-She was teaching Lani how to cast her line.

Schwans Country BBQ Nachos

These may not be good for you but they sure do taste good!

I made this recipe for David this past weekend and he said it was one of the best things I ever made.

I don't know if I would go that far but I do agree that they taste pretty darn good.

The only thing I would suggest that the recipe doesn't is the dressing & cream cheese mix...I would put that in a squeeze bottle next time. It is hard to spread that over the nachos and get it even. A squeeze bottle would control how much you put on the nachos.

Ingredients
BBQ Pork
1 pkg. corn tortilla chips
1 cup ranch dressing
1 8 oz. pkg. cream cheese, softened
2 cup Sweet Corn
1 cup shredded Cheddar cheese
sliced jalapenos to taste
Steps
1. Preheat oven to 350F.
2. Cook BBQ pork according to package directions.
3. Arrange tortilla chips on large oven safe serving platter.
4. Mix ranch dressing and cream cheese.
5. Layer BBQ pork, ranch/cream cheese dressing and corn on top of tortilla chips.
6. Sprinkle with shredded cheese and jalapenos. Bake at for 10-15 minutes or broil until cheese melts.

Azalea & Other things blooming in my backyard

Lani Singing & Car Dancing

As we drove from Sikeston to Kennett, Lani kept us entertained with her singing and car dancing. She was unaware that we were watching her, much less recording her. Kara and I thought it would be fun to record her, so we set the camera on the console between the front two seat and now we can share the show with you. I love it that Trey doesn't even pay attention to her. He was too busy with his juice and his cereal. He had poured his cereal into that bottle and was trying to get it out. Proof boys don't listen to girls.
