What a weekend!!!!

Is the weekend over already? Whew! What a busy weekend!
My Mom & I ran in a 5K this weekend. My mom finished in 41 minuets and I finished in 37:22. It was hard but fun all at the same time. I'm glad we did it.
Good Job Mom!

Then David & I did yard work on Sunday. We trimmed back bushes, cleaned out flower beds, and put out mulch. Oh...too much work. I told David he was trying to kill me. Thankfully I survived and here is a pic of me and kids by the trailer we filled up.


The kids played in the slip & slide while yard work was being done. They had a lot of fun. The first time playing in the water at the start of the summer is always fun.

PreSchool Days are Over

My little Lou graduated from Preschool last Friday. It was all too cute. Yesterday was the last day of preschool for her and this morning she just cried because she wasn't going to school to see her teachers and friends. It just broke my heart for her. I told her she had the summer to look forward to. She will get to go to Mrs. Belinda's, we are going to the Zoo soon, and she will get to spend time with her grandparents. This only eased the tears a little bit.
This is proof that growing up is hard to do.

Our First Fishing Trip

The kids and I went fishing at Jerry Paul Combs Lake in Kennett. It was a nice day but a little windy. Here are a few pics from our trip.

Schwans Country BBQ Nachos


These may not be good for you but they sure do taste good!

I made this recipe for David this past weekend and he said it was one of the best things I ever made.

I don't know if I would go that far but I do agree that they taste pretty darn good.


The only thing I would suggest that the recipe doesn't is the dressing & cream cheese mix...I would put that in a squeeze bottle next time. It is hard to spread that over the nachos and get it even. A squeeze bottle would control how much you put on the nachos.

Ingredients
BBQ Pork
1 pkg. corn tortilla chips
1 cup ranch dressing
1 8 oz. pkg. cream cheese, softened
2 cup Sweet Corn
1 cup shredded Cheddar cheese
sliced jalapenos to taste
Steps
1. Preheat oven to 350F.
2. Cook BBQ pork according to package directions.
3. Arrange tortilla chips on large oven safe serving platter.
4. Mix ranch dressing and cream cheese.
5. Layer BBQ pork, ranch/cream cheese dressing and corn on top of tortilla chips.
6. Sprinkle with shredded cheese and jalapenos. Bake at for 10-15 minutes or broil until cheese melts.

Lani Singing & Car Dancing

As we drove from Sikeston to Kennett, Lani kept us entertained with her singing and car dancing. She was unaware that we were watching her, much less recording her. Kara and I thought it would be fun to record her, so we set the camera on the console between the front two seat and now we can share the show with you. I love it that Trey doesn't even pay attention to her. He was too busy with his juice and his cereal. He had poured his cereal into that bottle and was trying to get it out. Proof boys don't listen to girls.

Mother's Day Idea

The website above has some original beautiful work that I really love. I have sent my husband a few emails over the last couple of weeks telling him I would love to have this necklace for Mothers Day. I left nothing to chance, left no subtle hints...I just flat out told him. I thought this would be the best approach. No need in dancing around the subject in order to get what you want. Well, tomorrow is the last day to order something in time for Mother's Day. I hope he gets his order in on time.


Roasted Potatoes With Blue Cheese & Walnut Butter

  • 1 lb thin-skinned baby potatoes, halved

  • 1 1/2 tsp olive oil

  • 1/4 tsp freshly ground black pepper

  • 1/8 tsp salt

  • 1/2 c coarsely chopped walnuts

  • 2 oz crumbled blue cheese

  • 2 scallions, thinly sliced


1. Preheat the oven to 425 degrees.

2. Coat a 9-inch by 9-inch baking dish with cooking spray or lined with parchment paper.

3. Place the potatoes in the prepared dish and toss with the oil, pepper and salt. Turn cut side down in the pan.

4. Roast for 30 to 35 minutes or until very tender and lightly golden on the underside.

5. Meanwhile, put the walnuts in a small baking pan or skillet and place in the oven to toast for 6 to 8 minutes. Tip into a bowl and let cool.

6. Add the blue cheese and scallions, and crumble with your fingers.

7. When the potatoes are done, turn them over and sprinkle evenly with the walnut mixture. Bake for 5 minutes longer or until the cheese is melted.

8. Divide into four servings and enjoy!


Each serving has about 240 calories, 3 grams of fiber and 7 grams of protein. A splurge worth feeling good about!

Yuck

When does it happen that you no longer know what you look like? How can you think one way in your head and see something else in a photo? I saw a photo of myself lately and it is not what I see in the mirror everyday. How can that be? I no longer want to tag any photos of myself on fb. I no longer even want my photo taken. Yuck. I'll let you know when I do something about what I am seeing.

5KFVS RUN / WALK



Did you read the title? Yep, I'm doing a 5K walk (no way am I running). The money raised goes to a good cause and I need some good motivation to help me get some exercise. So this is a win-win for me. Providing I don't pull a muscle or anything like that.


The event will be held downtown Cape Girardeau on May 22, 2010 at 8:30 am. There is a $20 entry fee. Plus you get a t-shirt and a goody bag. What more could you want?
